To make gold chocolate, the milk solids and sugars in white chocolate are slowly caramelized until the whole thing turns toffee-gold.
We cast it solid in a maple leaf mold, so you get warm caramel notes in the shape of the flag. It is the lollipop for anyone who finds plain white chocolate too tame, and it still makes a thoughtful Canadian gift.
