About Bala Cranberry (Dark)
Bala throws a festival for the cranberry every fall, and this bonbon is our love letter to it. We fold local Johnston’s cranberries into a bright pate de fruits, then settle the tartness with a smooth Madagascar vanilla ganache.
The 66% Valrhona Caraibe shell keeps it grown-up: fruit-forward, a little tart, never sweet just to be sweet.
Hand-painted in the shop, one shell at a time, it is a small piece of Muskoka you can actually taste. A fitting thing to bring home from cottage country, or to hand a host who thinks they have tried everything.
