Raspberry (Dark)

Raspberry and dark chocolate work because they argue. The fruit brings a sharp, tart snap; the 66% Caraibe shell answers with bitterness. In between sits a bright raspberry pate de fruits over a dark ganache.

We brush each shell a deep berry red by hand, right in Bala. It is fruit-forward and never cloying.

A good after-dinner bonbon for anyone who finds most chocolates too sweet.
