About Crème Brûlée (Dark) (G)
Creme brulee lives or dies on contrast: soft custard against a crackle of burnt sugar. We built that into a bonbon with a vanilla bean ganache, real caramelized sugar, and feuilletine, the crisp crepe flakes that give it snap.
The 66% Valrhona Caraibe shell keeps it from tipping too sweet. We paint every shell by hand in the Bala kitchen.
A neat after-dinner bite when you want dessert but not a whole plate.
