Passionfruit (Dark)

Passionfruit is loud on its own, so we give it a partner. A tart passionfruit pate de fruits leads, then a Madagascar vanilla bean ganache rounds the edges before the 66% dark shell closes it out.

The result is tropical without turning candy-sweet, each dome hand-painted in vivid colour in Bala.

Slip one between the caramels as a sharp wake-up call.
